Quick Pad Thai
Ingredients
- 8oz rice noodles
- 1 tablespoon brown sugar
- 1 tablespoon lime juice
- rice vinegar
- 2 tablespoons soy sauce
- sesame oil
- vegetable oil
- 2 scallions or red onion (sliced or diced)
- 1 clove garlic (minced)
- 1lb vegetables (chopped)
- 8oz seafood/meat/tofu
- cilantro (chopped)
- peanuts (chopped)
Directions
Step 1 | |
Soak rice noodles in hot water until al dente, but not soft. Should be about 8 minutes, give or take. | |
Step 2 | |
In a bowl, whisk 1 Tbsp. brown sugar, 1 Tbsp. lime juice and 2 Tbsp. soy sauce (adjust quantities to taste). Set aside. In a separate blow, season protein with a combination of any/all of the following: soy sauce, rice vinegar, lemon or lime juice, sesame oil, or vegetable oil. | |
Step 3 | |
On the stovetop, heat a pan to medium-high and add a drizzle of vegetable oil. Cook sliced scallions (or red onion) and diced garlic to the pan. This is a good time to add vegetables like asparagus, broccoli, cauliflower, etc. When the vegetables are bright and cooked through, move them to a plate. | |
Step 4 | |
Cook seasoned protein. Add the soy sauce mixture and drained noodles to the pan with cooked protein, toss, then add cooked vegetables. | |
Step 5 | |
Plate the pad thai and garnish with cilantro and/or chopped peanuts, if desired. |
