Quick Pad Thai

Quick Pad Thai

Ingredients

  • 8oz rice noodles
  • 1 tablespoon brown sugar
  • 1 tablespoon lime juice
  • rice vinegar
  • 2 tablespoons soy sauce
  • sesame oil
  • vegetable oil
  • 2 scallions or red onion (sliced or diced)
  • 1 clove garlic (minced)
  • 1lb vegetables (chopped)
  • 8oz seafood/meat/tofu
  • cilantro (chopped)
  • peanuts (chopped)

Directions

Step 1
Soak rice noodles in hot water until al dente, but not soft. Should be about 8 minutes, give or take.
Step 2
In a bowl, whisk 1 Tbsp. brown sugar, 1 Tbsp. lime juice and 2 Tbsp. soy sauce (adjust quantities to taste). Set aside.

In a separate blow, season protein with a combination of any/all of the following: soy sauce, rice vinegar, lemon or lime juice, sesame oil, or vegetable oil.
Step 3
On the stovetop, heat a pan to medium-high and add a drizzle of vegetable oil. Cook sliced scallions (or red onion) and diced garlic to the pan. This is a good time to add vegetables like asparagus, broccoli, cauliflower, etc. When the vegetables are bright and cooked through, move them to a plate.
Step 4
Cook seasoned protein. Add the soy sauce mixture and drained noodles to the pan with cooked protein, toss, then add cooked vegetables.
Step 5
Plate the pad thai and garnish with cilantro and/or chopped peanuts, if desired.
