I just cooked this tonight and it was delicious! My son ate it up and I am happy to report it was his first "adult meal." My husband asked for seconds (which he never does) he liked it so much.

I used cream cheese and squeezed out the potato by hand which helped make it crispy. It tured out great, thanks for a wonderful recipe I will cook over and over!

I did NOT know. Until it happened. Allergist was clueless and prescribed me an Epipen, my mom was obsessed with finding the answer. Lots of Googles later, she knew.

Andrea - That's a great tip about the whole family eating the same food. No "grownup food" vs. "kiddie food." And reason #1...a Jewish mom after my own heart! :)

I would like to see the carb contents to calculate Weight Watchers Points. I just had a Slimbun from America's Choice (Pathmark) and I thought it was too sweet. I would be interested to see a comparison of the sweeting ingredients in the different brands.

My mom was home when we got back from school, but left for work again, usually by 5:30. She made sure we ate dinner before we left for two reasons: 1) she didn't want us to choke while she was gone. 2) she didn't think we should have a snack after we arrive home from school, because if we're famished, we should just eat dinner then! She never made us anything at home that she wouldn't eat herself. She didn't blink an eye when I stopped eating meat around 10; it wasn't an issue. I'm not sure she actively thought about the questions or topic above, but she implemented a method that worked to create lifelong balanced, adventurous eaters.

I want to note that if you are very allergic to poison ivy you should be extra careful when handling whole mangos. The oil that makes us allergic to poison ivy is in the sap of a mango tree, and I have gotten a reaction from handling whole, unpeeled mango and then touching my face. Our palms are pretty immune.
