Cacio e Pepe – A 3-Minute Meal!

Ok, perhaps a 13-minute meal in total if you grate the cheese yourself and count boiling time in the equation. Still, it’s better than a 30-minute meal, right? This is the perfect dish to prep quickly so that the kiddos can get some food in their bellies and then run out the door to go trick or treating tonight!

Cacio e Pepe – Ramen Style

Ingredients

  • packaged instant ramen
  • 1/2 cup water
  • olive oil
  • salt
  • pepper
  • cheese (grated or shredded parmesan, pecorino, romano, mozzarella, etc.)

Directions

Step 1
Boil water in small saucepan. Add salt, pepper, cheese, olive oil.
Step 2
Open ramen package. Toss out flavoring packet. Place block of ramen into boiling cheese water. Cook for roughly 3 minutes until noodles are soft and ready to eat.
Step 3
Serve in bowl and garnish with black pepper.

Shoutout to my twitter friend ChezWu for reminding me of this David Chang clip on The Mind of a Chef demonstrating this “unrecipe” and encouraging me to experiment in the kitchen. Check out Chang’s demo at the 2:37 mark.

Happy Halloween!

What do you think of cacio e pepe made with ramen? An abomination or a quick way to enjoy a classic Italian dish?

PS – Technical difficulties are messing with our main blog photos, so please be patient! We’re working out the bug!
